The full flavoured grapes used to produce The Dry Dam Riesling were gently crushed in small batches, chilled, and basket pressed. The juice obtained was then fermented until dryness, to retain the residual sugar elements. This process led to the creation of a pale straw coloured wine showing light green shades.
