Anything but classic, this wine shows off bold aromas of black currant, blackberry and notes of toasted oak, followed by juicy flavors of black cherry, ripe plum and sweet herbs with a hint of spice rounding out the finish. Supple, velvety tannins and lush fruit make this wine an ideal match for beef sliders, Tandoori chicken or even chocolate mousse.Pale salmon pink, with an onion skin color. Fresh, flavorful, and luscious, with a very good acidity. The aftertaste brings back notes of red fruits. It exhibits red and tropical fruit flavors with a medium aromatic intensity. Perfect for all types of appetizers and Mediterranean cuisine. The colour and tannins of the wine are delicately extracted by employing traditional vinification methods and long maceration (20 days). The resulting wine combines power and refinement. It exhibits a deep purple-crimson robe, a nose of violets and ripe red fruits with hints of vanilla oak. A structured wine with an ample, round finish enhanced by liquorice tannins. At the southern tip of Africa, along the brooding, craggy coastline of the southern Cape, two mighty but opposing oceans meet - the one cold, the other, warm. The impact is immense. It affects the climate, the coastline and areas inland, and the influence on the vineyards of the Western Cape is significant. The Atlantic Ocean that flows along the west coast of Africa is fed by the icy Benguela current from the South Pole. The Indian Ocean is fed by the Agulhas current coming from the tropics. Their connection, amidst crashing waves and soaring spray, creates a unique set of conditions.Whether along the coast or further inland, the presence of the oceans is never far away. Cooling sea breezes and mists can lower temperatures during the lead-up to the harvest, slowing down ripening. Grapes aren't hurried but develop in their own time with flavours that are balanced, intense and plentiful.Vines perform at their best when they are put to work in the type of soil and climate from which they develop. Cabernet Sauvignon vine stock 337 originated at the great Châteaux in Bordeaux, France, and flourishes in the similar soils and climate of our vineyards in Lodi, beginning with our home vineyard, Clay Station. 337 Cabernet Sauvignon berries are noticeably smaller than average, resulting in small yields, high skin-to-juice ratio, and deep, concentrated flavors. This allows us to blend in other Cabernet Sauvignon selections with bright flavors and silky texture to the final blend, for boldness and balance. “Our Clay Station Vineyard is composed of deep, pebbly clay soils, on a unique site at the top of the most elevated knoll of Lodi, catching the cool afternoon breezes from San Francisco Bay. This vineyard produces grapes of such quality that, before Noble Vines, it supplied Cabernet Sauvignon for prestigious wines selling at three times the price.
