Description

The colour and tannins of the wine are delicately extracted by employing traditional vinification methods and long maceration (20 days). The resulting wine combines power and refinement. It exhibits a deep purple-crimson robe, a nose of violets and ripe red fruits with hints of vanilla oak. A structured wine with an ample, round finish enhanced by liquorice tannins.

A structured wine with an ample, round finish enhanced by liquorice tannins. At the southern tip of Africa, along the brooding, craggy coastline of the southern Cape, two mighty but opposing oceans meet - the one cold, the other, warm. The impact is immense. It affects the climate, the coastline and areas inland, and the influence on the vineyards of the Western Cape is significant. The Atlantic Ocean that flows along the west coast of Africa is fed by the icy Benguela current from the South Pole. The Indian Ocean is fed by the Agulhas current coming from the tropics. Their connection, amidst crashing waves and soaring spray, creates a unique set of conditions.Whether along the coast or further inland, the presence of the oceans is never far away. Cooling sea breezes and mists can lower temperatures during the lead-up to the harvest, slowing down ripening. Grapes aren't hurried but develop in their own time with flavours that are balanced, intense and plentiful.Vines perform at their best when they are put to work in the type of soil and climate from which they develop. Cabernet Sauvignon vine stock 337 originated at the great Châteaux in Bordeaux, France, and flourishes in the similar soils and climate of our vineyards in Lodi, beginning with our home vineyard, Clay Station. 337 Cabernet Sauvignon berries are noticeably smaller than average, resulting in small yields, high skin-to-juice ratio, and deep, concentrated flavors. This allows us to blend in other Cabernet Sauvignon selections with bright flavors and silky texture to the final blend, for boldness and balance. “Our Clay Station Vineyard is composed of deep, pebbly clay soils, on a unique site at the top of the most elevated knoll of Lodi, catching the cool afternoon breezes from San Francisco Bay. This vineyard produces grapes of such quality that, before Noble Vines, it supplied Cabernet Sauvignon for prestigious wines selling at three times the price. Château Cissac is located in the heart of the Médoc region. Its exceptional terroir adjoins that of the prestigious Saint-Estèphe and Pauillac appellations, extending over an area of around a hundred hectares. The soil is mainly sandy gravel on top of clay and limestone, and the vineyards occupy a single tract of land which is sheltered by the village of Cissac and the forests which surround it. In keeping with Médoc tradition, the vineyards are mainly planted with, Cabernet Sauvignon.Summer aromas of fresh kiwi and honeydew melon fruits are balanced by lemon cream, freshly baked croissants and vanilla custard. This fresh, clean, bright Chardonnay is fruit driven with flavors of gooseberries. Oak aging rounds out the mid-palate and frames the fruit. Pair this wine with roast turkey, chicken Alfredo, cobb salad, grilled salmon, or your favorite grilled cheese sandwich and tomato soup. For a dessert pairing trying this wine with apple pie a la mode. The Gnarly Head Cabernet Sauvignon is a bold, rich, red wine grown from some of the oldest vines in California. The grapes for this Cabernet Sauvignon are harvested off "head trained" vines that resemble wild bushes with twisted old trunks and branches that spread out in all directions like unruly umbrellas - truly gnarly heads. These untamed vines produce full-flavoured grapes, with dense aromas of black cherry and juicy blackberry.
